Ingredients:

150g (1 cup) Gluten free self raising flour

1/2 cup oil

1 cup brown sugar

2 eggs

1.5 cups grated carrots

1/2 cup chopped walnuts

1/2 teaspoon vanilla

1/2 teaspoon cinnamon

1/2 cup shredded coconut

1/2 cup choc chips


Icing:

Cream together

125g low fat cream cheese

2 tablespoons icing sugar

1-2 teaspoons orange juice


Method:

Set oven at 190 degrees.

Sift together self raising flour and cinnamon. In a separate bowl, combine the oil and sugar. Add the eggs and mix well. Add in the flour, cinnamon, carrot, nuts and vanilla to the mixture and mix well. Pour into large, well greased baking dish and bake for 50 minutes.

Allow to cool and ice.
